Why Meater Ambient Shows Wrong Temperature

As a Meater thermometer is constructed differently, the ambient probe is located in the black ceramic handle which is closest to the meat. 

Certainly, it will be highly affected by the temperature of the meat itself. At the beginning of your cooking, the meat is cold and so is the ambient temperature count. 

As time passes by, the meat is cooked and the heat count rises higher. Therefore, the Meater probe shows higher temperature reading.

On the one hand, the cooker’s reading remains consistent. But on the other hand, the probe’s reading increases and decreases based on the temperature of the meat.

No, not really. It always differs from the temperature of the oven/grill. Sometimes it’s lower and sometimes higher. That’s mostly because of the influence of the meat temperature.
